    You can whip up this vegan strawberry milk in less than10 minutes — it’s dangerously simple to make! Just like my Strawberry Boba Tea, it’s a great way to use up juicy, ripe strawberries when they’re in season.

    Just boil cashews in water to soften, then blend the all the ingredients together. It’s so refreshing and satisfying! Everyone always loves the rich, creamy texture paired with the natural sweetness of ripe strawberries.

    • Strawberries: Strawberries add a fresh, fruity flavor. Their ripeness significantly impacts the sweetness and flavor intensity, so make sure they are nice and ruby red.
    • Maple syrup: This natural sweetener brings a subtle, earthy sweetness that complements the strawberries without overpowering them. Use pure maple syrup here.
    • Soy or oat milk: I prefer soy or oat milk for the creamiest, silkiest consistency. Soy milk offers a slightly thicker texture and a higher protein content, while oat milk is sweeter and lighter. Just use your favorite one!
    • Raw cashews: To add more richness and creaminess. Once blended, raw, unsalted cashews thicken the milk and add a slightly sweet taste.

    Substitutions

    • Strawberries: You can swap fresh strawberries for frozen. The flavor will be less vibrant, and the texture might be a bit thicker. Use the same ratio.
    • Maple syrup: If you don’t have maple syrup, use an equivalent amount of agave.
    • Milk: Use your favorite plant-based milk! Try almond, pea, hemp, or cashew milk.
    • Cashews: You can try blanched almonds, but they won’t provide as creamy a flavor.

    Preparation

    Wash the strawberries thoroughly to remove any dirt or pesticides, then remove their stems. Boil the cashews in hot water for about 5 minutes to soften and to make blending easier.

    Submerge raw cashews with water in a pot over medium heat. Let them boil for 5 minutes till they soften. Then drain out the water and let the cashews cool down.

    Blend the strawberries, softened cashews, plant milk, and maple syrup in a high-speed blender until smooth. Ensure the blender is powerful enough to pulverize the cashews completely to avoid a gritty texture.

    Strain the blend over a mesh sieve into a serving cup to remove all the seeds and pulp for silky-smooth vegan strawberry milk. If you prefer a frothy texture, use an electric whisk. If you like it extra cold, then serve over ice.

    DESCRIPTION

    This creamy vegan strawberry milk is easy to make with just 4 simple ingredients. Naturally sweet strawberries blended with soften cashews for extra richness, maple syrup, and your favorite plant-based milk. It's so refreshing and perfect as a summer treat.

    INGREDIENTS
      

    • 1 ½ cup strawberries fresh or frozen
    • 3 tablespoon maple syrup
    • ¾ cup soy milk or oat milk
    • ¼ cup raw cashews optional - to make it thick and rich

    METHOD
     

    • Submerge raw cashews with 1 cup of water in a sauce pan over medium heat. Let the cashews boil in water for 5 minutes till softened, then drain them out and cool off for 10 minutes.
    • Remove the stems of the strawberries. Place them in a high speed blender with softened cashews, maple syrup and plant milk. Blend till smooth.
      Note: It's important to use ripe, sweet strawberries for the best flavor.
    • Strain the strawberry liquid through a sieve into a serving glass or bottle to remove all the seeds from the strawberry milk.
    • Serve it over ice to make it extra chill, and or use an electric hand frother to whisk the milk to serve it frothy.
