This sweet and zesty ginger beer mocktail is so refreshing with a perfect spicy kick. Have yourself a light and flavorful alcohol-free drink with just a few basic ingredients. It's packed with fizzy, gingery, refreshing flavors that come together so seamlessly. A quick and easy, crowd-pleasing drink that looks and tastes fancy.
Zest the lime without going too deep into the white pith (bitter in taste). Then squeeze the juice out of the lime using a citrus squeezer.Note: Comes out to about a tablespoon of freshly squeezed lime juice.
Mix together the freshly lime juice, lime zest, mint simple syrup, and sparkling water in a separate cup.Note: Recipe for mint syrup is linked in the ingredients.
Add the desired amount of ice into the 2 serving glasses, and then pour over an equally divided amount of the prepared sparklingly lime water in each glass.
Next, evenly top each glass with ginger beer, and give it a gentle stir.
Garnish with lime slices and mint sprigs before serving.
NOTES
Chill the Ingredients: Make sure the ginger beer, sparkling water, and limes are chilled. Even though you’ll be using ice, cold ingredients better maintain the fizz and flavor.
Homemade is Best: If you have time, I recommend making your own mint simple syrup for a more intense flavor. Store-bought syrups work but may taste sweeter or less minty.
Taste Before Serving: Adjust the sweetness or tartness as needed. Everyone’s preference differs, so give it a quick sip before serving to ensure it’s to your liking!
