1tablespoongingergrated
2tablespoonlemon juicefreshly squeezed
1tablespoonsimple syrup, cardamom syrup or maple syrupoptional
METHOD
Slice and remove pit from the plums. Roughly chop the plums and place them in a medium size sauce pan with water and grated ginger.
Bring plums to a boil and then turn down the heat to low. Simmer for 10 minutes while the plums release all the juice.
Next, remove from heat and let it cool for 15 minutes. Use an immersion hand blender to purée the plums.
Strain the plum juice with a fine mesh sieve or cheese cloth into a mixing bowl.
Add lemon juice and sweetener of choice (optional) and transfer into an air-tight bottle. Refrigerate for at least 2 hours to chill before serving.
NOTES
Ripe plums: It’s important to choose ripe plums for the best flavor and texture.
Adjust the taste: Taste and adjust the ratios of sugar and ginger to suit your liking.
Strain: To end up with the smoothest texture, strain the mixture through a fine-mesh sieve or a cheesecloth.
Serve cold: Plum juice is best served when it’s ice cold. Make sure you give it time to chill.
Remove pits: To avoid any bitter flavors, remove the pits before cooking the plums.
