INGREDIENTS
2cupsEnglish cucumber or Persian cucumberschopped
1wholebanana
1cuppineapple chunksfrozen or fresh
1cupspinach
1cupsoy milkunsweetened
2tablespoonlemon juicefreshly squeezed
METHOD
Chop the cucumbers into smaller pieces. Note: Peel off the skin, if using a regular cucumber with thicker skin.
Place all the ingredients into a blender in following order: soy milk, cucumbers, spinach, pineapple, banana, and lemon juice.
Blend using a high-speed blender until the smoothie is completely smooth and creamy. Note: If the smoothie is too thick, add a little more soy milk to reach your desired consistency.
Pour the smoothie into a glass and enjoy immediately.
NOTES
Use frozen fruit: Frozen fruit helps create a colder, more refreshing smoothie. If you only have fresh pineapple and banana, add a few cubes of ice to chill the smoothie.
Peel cucumbers for a milder flavor: If you prefer a more neutral taste, peel the cucumbers before adding them to the blender.
Adjust the consistency: Add more soy milk for a pourable smoothie. Use less soy milk if you want to make a smoothie bowl.
Ripe bananas: For the sweetest flavor and creamiest texture, use very spotty bananas.
Wash the greens: Thoroughly wash and check over your spinach to avoid grittiness or potential contamination.
