This creamy and zesty vegan cilantro lime dressing is so refreshing flavorful. It takes less than 5 minutes to whip up, and it is so versatile. Use it to dress your fresh leafy greens, drizzle over roasted veggies, or use it as a marinade for tofu and tempeh. It's a must try this summer!
INGREDIENTS
½cupcilantro
½cupraw cashews
½cupwater
1tablespoonnutritional yeast
2tablespoonlime juice
1tablespoonlime zest
2clovesgarlic
2tablespoonolive oil
2tablespoonwhite vinegar
2tablespoonmaple syrup
½teaspoonsalt
METHOD
Submerge cashews in a bowl with boiling water and soak them for 25 minutes. Drain before blending.
Grate the zest from the lime using a zester or a box grater, and then squeeze out the fresh juice using a citrus squeezer.Note: Only remove the colored part of the lime (not the pith). The pith will have a bitter taste.
Blend all ingredients for the dressing together until combined.
Transfer your finished vegan cilantro lime dressing to an airtight container for storage.
