This strawberry goat cheese salad is the perfect summer delight. A mix of fresh spring mix, sweet chewy dates, crunchy walnuts, juicy strawberries, and creamy vegan goat cheese. Tossed with a sweet and tangy balsamic glaze.
To crumble vegan goat cheese: If making your own vegan goat cheese, then place it in the freezer to firm for 30 minutes. Then use a fork to gently pull off small pieces of the cheese.
Place your greens in a large mixing bowl and along with thinly sliced onions, strawberries, dates, crumbled goat cheese and walnuts.
Drizzle over the balsamic glaze and olive oil and toss together.
Garnish with crushed black peppercorn before serving.
