This refreshing strawberry boba has a fruity twist on the classic bubble tea. It's sweet, tart and creamy. Perfect for a midday pick-me-up. It only requires 5 ingredients, and it's customizable to your preference on mixing and matching different fruits or adjusting the sweetness. So skip the high priced and high in sugar bubble teas at the shops, when you can make it equally delicious at home with much less added sugar.
INGREDIENTS
Boba
¼cupboba pearls
2tablespoonstrawberry simple syrupor maple syrup
Strawberry Milk
1cupstrawberries
⅓cupoat milkor preferred plant milk
⅓cupice
Optional: Brewed Tea
1bagblack teaor green tea
⅓cuphot water
METHOD
Optional: Brewed Tea (if adding tea to you strawberry boba)
Steep the tea bag in hot water (180℉) for 5 minutes in a mason jar. Then use a spoon to scoop out the tea bags and discard them. Screw a lid over the mason jar and refrigerate the brewed tea for at least an hour till it's completely chilled.Note: It is best to refrigerate the brewed tea overnight.
To cook boba
In a saucepan, submerge tapioca pearls in boiling water. Cook until pearls float to the top and then cook about another 3-4 minutes. Scoop out one and taste test the texture to make sure they are ready before draining. Next drain and transfer into a bowl.
Immediately mix in the syrup and the boba pearls, and set aside.
Strawberry milk tea blend
Place brewed tea, oat milk, and strawberries in a blender. Blend till you achieve a smooth consistency.
To assemble
To assemble in a tall glass - Add boba along with syrup to the bottom of the glass. Then add crushed ice, followed by the strawberry milk tea blend. Optional: In the inside of the glass, swirl some strawberry jam along the sides before you start to assemble.
NOTES
Fresh is best: I recommend using fresh strawberries for the best results, especially when they’re in season.
Chill the tea: Cold tea prevents the ice from melting and the boba from cooking further. Let it cool completely before blending it with the berries and oat milk.
Perfect pearls: Remove the boba from the pot soon after they begin to float to prevent overcooking them. You still want them to be slightly chewy.
Serve immediately: Strawberry boba tea tastes best when it’s fresh, so serve it immediately after assembling it.
