This easy lime simple syrup recipe requires only 3 basic ingredients to make. It's a perfect zesty flavored sweetener to elevate your drinks or desserts with citrusy goodness. Use it to sweeten iced teas, lemonades, or mocktails (like my coconut water mocktail). The options are virtually endless!
INGREDIENTS
1 ½cupssugar
1cupwater
2 tablespoonlime zest
½cuplime juice freshly squeezed
METHOD
Grate the zest from the limes using a zester or a box grater, and squeeze out the fresh juice from limes using a citrus squeezer.Note: Only remove the colored part of the lemons (not the pith). The pith will have a bitter taste.
In a small saucepan, combine lime zest, water and sugar on medium heat. Once it starts to bubble, then reduce heat to a low simmer for 15 - 20 minutes. Continue stirring till the sugar is completely dissolved.
Remove from heat and then stir in the lime juice. Set aside to let it cool down to room temperature.
Pour syrup into a mason jar through a fine mesh strainer to drain the liquid and remove the zest.
Store lime simple syrup in an air-tight glass jar. Refrigerate and use as needed.
NOTES
Batch Prep: Double the recipe and store extra syrup in the fridge for future use.
