These healthy banana popsicles are a refreshing treat for the summer days. They are easy to make by simply combining ripe bananas, vegan yogurt, maple syrup, and salt. Once frozen, enjoy them as they are or dip them in melted chocolate and top them off with some crushed peanuts. A nutritious snack for all ages.
INGREDIENTS
2whole bananas (ripe)medium sized
2cupsvegan yogurtI used Trader Joe's cashew based.
4tablespoonmaple syrup
¼teaspoonsalt
Optional Ingredients
1cupchocolate chipsvegan
1tablespooncoconut oil
2tablespooncrushed peanuts
METHOD
Remove banana from peel and place it in a high speed blender along with the vegan yogurt, maple syrup, and salt.
Taste test and add more maple syrup, if you prefer more sweetness.
Divide the the blend into popsicle molds. Insert popsicle sticks, and freeze for at least 5-6 hours.
Once the popsicles are frozen solid, then place the molds under warm running water for a few seconds till the the popsicles can easily slide out. Or you can simple dip the molds into warm water (not hot) for about 20-30 seconds to help pull out the popsicles with ease.
Melt chocolate chips in a sauce pan over a low simmer while continuously stirring. Add coconut oil to thin out the consistency.
Simply dip the popsicle into the melted chocolate coating about half way, drizzle it over the popsicles.
Sprinkle over some crushed peanuts.
NOTES
Stir chocolate continuously: Stirring the chocolate constantly while it’s melting prevents it from burning and results in a smooth coating.
Chill the Molds: While not completely necessary, pre-freezing your popsicle molds for a few hours or overnight helps the mixture freeze more evenly.
Insert the Sticks Carefully: Once you place the molds in the freezer, double-check the popsicle sticks to ensure they are standing straight and are well-supported.
Double-Dip: For a thicker chocolate shell, try double-dipping the popsicles.
Sprinkle Peanuts Immediately: Sprinkle the peanuts right after dipping each popsicle into the chocolate mixture so they stick to the chocolate before it solidifies.
Freeze on a Level Surface: This prevents the popsicles from tilting and freezing unevenly.
