Air fryer spring rolls are one of the most easy and delicious snack or appetizer to serve at your convenience. These are crispy, crunchy, and packed with umami flavors! Enjoy them as-is or with a drizzle of sweet chili sauce. Toddler friendly!
Cook wood ear mushrooms in boiling water for 2 minutes before using. Then drain and pat dry with a kitchen towel. Next finely slice mushrooms and keep aside.
Cook mung bean noodles per package instructions. They should be translucent and clear when thoroughly cooked. Rinse under cold water and drain. Chop noodles with a pair of clean kitchen scissors into small bite size pieces.
Once all veggies are finely sliced into small bite size pieces, then toss them together into a big mixing bowl along with all the seasonings and vegan oyster sauce.
Add ground flax seed and toss again.
To Assemble: Place one rice paper at a time on a clean flat surface. Then dip a kitchen towel in cold water and gently rub to dampen the entire rice paper on each side.
Place 2 tablespoon of of the filling on the edge of rice paper and roll till it reaches the center. Fold the sides in and then roll the wrapper all the way through. (Similar to making burritos). --Repeat this step with more rice paper till the filling is all wrapped up in spring rolls.
Using clean hands, rub a little cooking oil on the spring rolls before the next step for extra crisp.
Only place a single layer of spring rolls into the air fryer basket without them touching each other. Note: If all spring rolls must be cooked, then air fryer must be used multiple times depending on the size of the air fryer basket.
Set air fryer to 350°F and cook for 10 minutes. Make sure to pause in the middle after 5 minutes to flip the spring rolls and then back again for the remaining 5 minutes.
Drizzle over some homemade chili garlic sauce before serving, or simply serve with a dipping sauce.
NOTES
Don’t overfill: Only use about 2-3 tablespoons of filling so you don’t break the wraps.
Cook in batches: If you’re making a large number of spring rolls, you may need to cook them in batches to prevent overcrowding the air fryer basket. If it’s overcrowded, the air won’t circulate properly, resulting in steamed air fryer spring rolls.
Cut small veggies: Make sure you cut the vegetables small enough so they cook quickly in the air fryer.
Brush with oil: If you forget to brush the spring rolls with oil, they won’t turn out quite as crispy and golden brown. Don’t skip the oil!
